Aloo Beans

Ingredients
- French Beans,250g (trimmed and chopped into 1-inch pieces)
- Potatoes (Aloo),2 medium (peeled and cubed small)
- Oil,2 tbsp (Mustard or Vegetable oil)
- Cumin Seeds (Jeera),1 tsp
- Turmeric Powder,½ tsp
- Red Chili Powder,½ tsp (adjust to taste)
- Coriander Powder,1 tsp
- Amchur (Dried Mango Powder),½ tsp (for a little tang)
- Salt,To taste
- Optional,”1 green chili (slit), a pinch of Hing (Asafoetida)”
Recipe
- Heat Oil in pan and add cumin seeds and Hing + green chilli
- Sauté the potatoes (don’t boil them first)
- Add chopped beans, turmeric, red chilli powder, coriander powder and salt
- Steam cook i.e. cover pan with lid and let it cook for 10-12 mins, stir to avoid sticking (don’t add water for crispiness)
- Add amchur powder and garam masala and saute another 2 mins
