Chicken Fried Rice

Ingredients

  1. 2 cups cooked rice (preferably day-old; jasmine works best)
  2. 1 cup chicken, diced or shredded
  3. 2 eggs, lightly beaten
  4. 1 cup mixed vegetables (carrots, peas, corn)
  5. 3 tablespoons oil (vegetable, canola, or sesame)
  6. 3–4 green onions, sliced
  7. 1 small onion, diced (optional)
  8. 2–3 garlic cloves, minced
  9. Soy Sauce
  10. Schezwan Sauce (if needed)
  11. White vinegar

Recipe

  1. Cook diced chicken seperately ideally with ginger garlic paste
  2. Start out with eggs beaten and cooked into a bhurji
  3. Seperately add oil and cook your veggies with mild seasoning
  4. Add cooked rice next with oil to fry it along with veggies
  5. Add a dash of soy sauce and vinegar
  6. Add cooked chicken on top and let it fry well
