Chicken Fried Rice

Ingredients
- 2 cups cooked rice (preferably day-old; jasmine works best)
- 1 cup chicken, diced or shredded
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 tablespoons oil (vegetable, canola, or sesame)
- 3–4 green onions, sliced
- 1 small onion, diced (optional)
- 2–3 garlic cloves, minced
- Soy Sauce
- Schezwan Sauce (if needed)
- White vinegar
Recipe
- Cook diced chicken seperately ideally with ginger garlic paste
- Start out with eggs beaten and cooked into a bhurji
- Seperately add oil and cook your veggies with mild seasoning
- Add cooked rice next with oil to fry it along with veggies
- Add a dash of soy sauce and vinegar
- Add cooked chicken on top and let it fry well
