Air Fryer Cookies

Ingredients
- Yellow onion: 1 medium (finely chopped)
- Garlic: 2–3 cloves (minced)
- Tomato purée: 1 can or jar (approx. 15–28 oz depending on desired yield)
- Water or Stock: 1–2 cups (vegetable or chicken stock works best)
- Olive oil: For sautéing
- Butter: (Optional alternative to olive oil)
- Sugar: 1 tablespoon (to balance the tomato acidity)
- Black pepper: To taste
- Salt: One pinch (or to taste)
Recipe
- Finally chop yellow onion and mince garlic
- Simmer butter/olive oil and add onion
- Let it sauté
- Add garlic and stir for a few mins (do not burn, burnt garlic is bitter)
- Add purée of tomato
- Add water/stock
- Add 1 spoon sugar, black pepper, pinch of salt
- let it simmer for a while (up to 20 mins)
- If thick → Mash it in the blender
- Do not over blend olive oil (it gets bitter)
